Observation (CORRECTED DURING INSPECTION): Soiled preparation utensils and food contact surfaces were observed in the first compartment and third compartment sink at the time of inspection.

Clean food contact surfaces (knives and preparation utensils) were being stored on the drainboard near the first compartment sink.

Staff member stated that they wash and rinse the pizza trays and preparation utensils in the two sink units near the air drying shelving side and then air dry them in the third sink unit.
Corrective Action(s): Make sure all pizza trays, preparation utensils (tongs, knives, etc.), and food storage containers are scraped, washed, rinsed, sanitized, and then air dried. Use 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) to sanitize food contact surfaces. Re-sanitize food contact surfaces.

Do not air dry food contact surfaces on the "soiled" drainboard side but air dry them on the air drying shelving unit.

Observation: Air dryer was not in good working oder in the washroom. Some paper towels were stored above the air dryer.
Corrective Action(s): If the air dryer is not fixed, then install a wall-mounted paper towel dispenser for the paper towels; Correct by September 20, 2019.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: In the absence of the Operator, both staff members on shift did not have a valid FOODSAFE Level 1 or equivalent course certificate at thet ime of inspection. This is a repeat violation.
Corrective Action(s): Make sure that at least one employee on shift at the food service establishment has a valid FOODSAFE Level 1 certificate or equivalent course certificate in the absence of the Operator; Correct by September 27, 2019. This is a requirement under Section 10 of the Food Premises Regulation under the Public Health Act. A follow up inspection will be conducted.

Permit to operate was posted in a conspicuous location.
Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and pizza coolers were at or below 4 degrees C.
Drinks cooler is used for storage of pop only.
Chest freezer was at or below -18 degrees C.
Refrigeration units were equipped with thermometers.
Hot-holding unit was turned off and was empty of food at the time of inspection.
100 ppm chlorine sanitizer was available in a container with a wiping cloth.
3-compartment sink was supplied with hot and cold running water via two faucets. Drain plugs were present.
Prep. sink was operational.
No signs of recent pest activity were present at the time of inspection.

Inspection report was reviewed with staff member on-site and with the Person in Charge over phone.
