Always store raw meats and chicken below any fresh vegetables.

Observation: -Build up of dirt and waste products noticed underneath both the upright cooler and upright freezer.
-Food and grease build up observed underneath the wok and in between the stove and deep fryer
Corrective Action(s): -Clean the floor thorouhgly underneath and behind these units ( By June 8, 2018).
- Remove all grease from in between the stove and grill.(By June 8, 2018)

Fume hood has now been serviced and cleaned. Good.
*Clean all dirty ceiling tiles and ventilation openings in the ceiling ( ASAP).

Preparation cooler below 4 C.
Front beverage cooler: 3.5 C
Upright freezer below -18 C.
Deep freezer at -16 C.
Hot holding of rice > 60 C.
Quats sanitizer at the dispenser tested 200 ppm.
Wiping cloths stored in 200 ppm chlorine bleach sanitizer.
