Observation (CORRECTED DURING INSPECTION): Packaged coleslaw, as well as artichoke hearts, were stored in the malfunctioning glass-door cooler at time of inspection. Cooler temperature measured at 9-10 C.
Corrective Action(s): Moved to working coolers. Ensure perishable, potentially-hazardous ingredients (including cut vegetables and salad ingredients) are kept out of this cooler until repaired and reinspected.

Observation: Back door to kitchen was left open at time of inspection.
Corrective Action(s): Closed during inspection. Ensure a tightly-fitting screen door is installed if you wish to leave this door open.

Observation (CORRECTED DURING INSPECTION): An opened can of artichoke hearts was stored in the glass-door cooler.
Corrective Action(s): Product transferred to food container during inspection. Do not store food in opened cans, as the metal may corrode and contaminate the food.

Observation: Glass-door cooler has not yet been repaired/replaced. Unit cannot maintain food at 4 C.
Corrective Action(s): Repair or replace cooler by end of this week (20th August 2017). Call for reinspection once issue has been addressed.

Comments

*Upright glass-door cooler has not yet been fixed - see violations section. Contact the area inspector for reinspection prior to placing food back into the new/repaired cooler.
*Note: no temperature logs were available for recent days of operation. Ensure these are started immediately.
*Organization of raw/ready-to-eat foods generally satisfactory. However, ensure frozen raw meat is relocated to bottom shelving of freezer, and all other refrigerated raw meats are moved to bottom shelving in black sliding door cooler.
*Hand sinks unobstructed during inspection. Note: do not store tongs on faucet of hand sink - this is not a sanitary storage location.
