Observation (CORRECTED DURING INSPECTION): 1. Low temperature dishwasher dispensed 10 ppm bleach sanitizer at plate level. A minium of 50 ppm is required to properly sanitize food contact surfaces.
2. Back kitchen area did not have food surface sanitizer available.
Corrective Action(s): 1. Do not use the dishwasher. Set up manual dishwashing at the 2 compartment sink. Ensure to sanitize utensils and plates manually.
2. Operator mixed 200 pm bleach sanitizer in a spray bottle for the back kitchen. Clean and sanitize all food contact surfaces.

Observation (CORRECTED DURING INSPECTION): One staff observed not hand washing his hands after handling bleach bottle and started preparing food immediately.
Corrective Action(s): Staff was directed to hand washing. Operator to educate staff on proper hand washing frequencies.

Observation: A plastic bowl was stored in the sauce container in the walk-in cooler.
Corrective Action(s): Remove the plastic bowl. Do not store any bowls in the food containers. Correct by: Immediately.

Observation: Low temperature dishwasher registered less than 50 ppm bleach sanitizer at the plate level.
Corrective Action(s): Service / fix the dishwasher to ensure low temperature dishwasher is able to dispensed in between 50-200 ppm bleach sanitizer at the plate level. Correct by: Feb 23, 2023.
