Observation: Rodent activity observed outside the facility in the fenced off garbage disposal area of the facility (backside). These rodents may enter into facility and can cause pest issues inside facility which may include potential contamination of food with their urine, feces and saliva.
Corrective Action(s): To prevent rodent activity in the facility, please follow these practices:
- Clean the garbage disposal area regularly.
- Prevent the build up and keep the bins closed.
- Keep the back door closed as it could be a potential entry point for rodents.
- Seal off any gap that could be a potential entry point for pests.
- Inform your Pest Control Company.

Observation: Floor in walk-in freezer was observed in unsanitary condition and had thick build up of dirt in certain areas.
Corrective Action(s): Please conduct deep cleaning of the floors in walk in freezer and ensure that the facility is maintained in good sanitary condition.

Comments

Routine inspection conducted and the following observations were made during the inspection:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Coolers recorded at or below 4C
- Walk in freezer at -16C
- Undercounter freezer at -18C
- Hot holding units above 60C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- 50ppm chlorine residual recorded at low temp mechanical dishwasher.

Pest Management:
- Professional pest control company conducts routine checks. Inspection reports verified.
- No visible signs of pest activity observed inside the facility at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Staff has valid FoodSafe Level 1 certificate (Exp August 16, 2023)
