301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): a) The bleach sanitizer solution was measured at over 200 ppm. This is not a safe concentration to be used around food.
b) Ice scoop was stored directly in the ice machine, with the handle touching the ice.
Corrective Action(s): a) Refilled to 100 ppm . One tsp of bleach per liter of water is required to acheive 100 ppm.
b) Moved during the inspection. Ensure that ice scoops are kept in a container or holder, not directly in the ice machine.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Staff observed preparing food in the back storage room. Discontinue this practice, since proper handwashing is not possible in this area. All food preparation needs to take place in the main kitchen.

Observation: Droppings found in the following areas:

-In the staff storage room
-In the electrical closet, next to the walk-in cooler.

Pest control is onsite on a biweekly basis, report reviewed during the inspection.
Corrective Action(s): Clean all droppings, and seal all entry points for rodents within one week.

Observation (CORRECTED DURING INSPECTION): The back door was open at the start of the inspection. Discussed installing a screen door with the owner.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Cleaning required in the following areas to remove grease/ food debris buildup:
-Underneath tables and equipment throughout the kitchen.
-In the walk- in cooler (cleaning started during the inspection)
-In the kitchen chest freezer (cleaning was completed during the inspection)
-In the storage area and in the staff closet, to remove rodent droppings.
Corrective Action(s): Clean within one week and ensure that cleaning is done on a regular basis.

Comments

-Purchase chlorine test strips for the dishwasher and for testing food contact surface sanitizer concentrations.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
The dishwasher had 100 ppm chlorine. Test daily.
Staff are FoodSafe Level 1 certified.

-A follow up inspection will take place in one week.
