Follow Up to "Critical" Violations Noted on Previous Inspections (if applicable)
Code 303 noted on Routine inspection # SMAW-AH62M5 of Dec-30-2016
Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: No hot water is available at hand sink or kitchen sink. Water is 35 Celsius.
This was a problem on the last routine inspection as well. Worker noted that she had just filled one compartment of the sink with warm water; this was observed. Your hot water system must be adequate to supply sufficient hot water so that you can fill both of your sinks and operate your dishwasher and still have plenty of hot water for hand washing and all other sanitary needs (such as rinsing your utensils behind the counter as per your sanitation plan.)

Repair or upgrade your hot water system so that you have plenty of hot water for all of your sanitary needs. Submit specs for your hot water supply or other proof of sufficient hot water supply to our office.
Please note that this infraction was also noted on the last routine inspection. It is a critical infraction and must be rectified very quickly. Failure to comply will result in progressive enforcement.

Premise is allowed to remain open at this time because the dishwasher is reaching a sanitizing temperature and there is some hot water available as evidenced by the full sink of warm water.
Correction:
