Observation (CORRECTED DURING INSPECTION): A couple of the multi-quat spray bottles measured below 150 ppm, with the ideal range between 200 and 400 ppm. Banquet bar area without sanitizer. Front bar area uses Peroxide multisurface for tables. Main quats feed measured 200 to 400 ppm.
Corrective Action(s): Review refilling procedures with staff and make sure sanitizer spray bottles are changed frequently to ensure acceptable sanitation is maintained at level of 200 ppm or more at all times.

Comments

Note: sewer gas related smells noted in kitchen. Grease trap lid slightly misaligned and not screwed down. Discussed with manager. Grease trap scheduled for clean out and may have been left ajar for that purpose.
**Make sure when cleaning is completed the lid is properly re-placed and screwed down. Sewer gases are considered a health hazard and could be a risk to kitchen staff. Monitor for continued smells and either add a rubber gasket around the edge of the lid to better isolate the gases or replace the lid as it is quite rusted.
Recommend a paper towel dispenser be installed in the baquet bar area (wall opposite counter an option) for staff to easily access and use.
Note: Clean up area below dishwasher, around the rodent traps.
Note: Back service door has very large gap between doors and looks to be subject to rodent activity or chewing. Replace plastic guard with metal guard to discourage rodent entry into building.
