*Noticed water pooling issue behind the automatic pan washer/chemical storage racks - floor to be re-finished so that is slopes towards the floor drains - Date to be corrected by Oct 25/21 - Splash guard installed between double pot sink and pot cooking range - Department manager is considering converting this sink to food prep sink - Prep coolers <4C - Dim sum hot holding unit >60C - Buffet - hot holding unit >60C - Walk-in cooler <4C - Walk-in freezer <-18C - Hand sinks supplied with liquid soap and paper towels - Dishwasher final rinse >71C at plate surface *Seal/caulk minor gaps along floor-wall functions especially behind the cook line in front of the house.
