Site visited as per request.

- New cook hired and on site. A copy of Foodsafe level 1 certificate has been provided to the health inspector.
- Facility will discontinue hot lunch and add sushi.
- Back prep room will be utilized for BBQ meat prep/storage and dishwashing only.
- Left prep room with a 2 compartment sink will be utilized for sushi prep/storage only. Dishwashing to occur in the back prep room.
- All sushi will be made in the prep room --> packaged in single use containers --> displayed in cooler across (<4'C).

New floorplan has been provided.
NOTE: Food Safety Plan & Sanitation Plan to be submitted.

Manager is unsure whether the hot holding table to stay or be removed.
Please contact the health inspector once the sushi cooler and rice cooker are obtained.
