Observation: One spray bottle of chlorox clean up noted on site. This is not approved for use on food contact surfaces as it requires a rinse for food contact surfaces. Drain plugs cannot be found. Chlorine concentration above 200ppm
Correction: 1) Purchase an acceptable no-rinse food contact surface sanitizer. Chlorine or quat based and ensure manufacturer concentrations are maintained
2) Locate drain plugs
3) Reclean and sanitize all equipment, utensils, dishes.

-Followup Inspection
-Previous violations have been corrected except as noted below:
-Minor grease accumulation on fire suppression pipes. Clean off to prevent contamination of food below.
-Food safe certificates and shift schedule are to be emailed to district environmental health officer. Spoke with operator on site and wife via phone to discuss outstanding requirement. Shift schedule is to include hours of operation, employees work shift, and copies of a valid food safe level 1 certificate and invoice for valid food safe level 1 courses. Operator will send via email today as confirmed on the phone. Further non-compliance may result in enforcement action such as violation tickets.
-Plumber on site during inspection to service drain pipes for both sinks. Sinks must properly drain prior to operation of food premises.
-Closure order rescinded.
