Observation:
Inside of ice machine has mould and mildew growth on the white plastic.
Corrective Action(s):
Discard current ice in machine. Clean and sanitize inside of ice machine as per manufacturer's instructions.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
All pails for QUAT sanitizer measured at a concentration of 50 ppm.
Corrective Action(s):
Immediately replace sanitizer in all pails and ensure concentration is at 200 ppm QUATs. Ensure to replace sanitizer at least every 2 hours.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION):
It was observed that all employees were not washing hands properly (i.e. only washing palms of their hands and total wash time was 5-10 seconds). Ensure to wash hands step by step as per the posted instructions above the hand sink.
Corrective Action(s):
Review proper hand washing procedures with all staff.

Routine Inspection:

Front:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Prep coolers and display coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
Hot holding units for rice and soup maintained above 60 degrees Celsius (140 degrees Fahrenheit).

Back:
- Temperature of walk-in cooler = 2.9 degrees Celsius.
- Temperature of stand-up freezer = -20 degrees Celsius.
- 2-compartment sink available for manual warewashing.
- Concentration of QUAT sanitizer at dispenser = 200 ppm.
- High temperature dishwasher sanitizing with 72.8 degrees Celsius at dish level after final rinse cycle.
- Dry storage area satisfactory.

Overall:
- Thermometers present in all cold holding units.
- Permit to Operate posted.
