Observation: Low temp dishwasher must be supplied with chlorine at minimum of 50ppm at the final rinse
Corrective Action(s): they will provide manual dish washing for pans and pots and other serving utensils will be washed in downstairs kitchen.

Comments

Me with kitchen manager on site and he provided me with the following information:
- daily temp logs are posted and up to date
- Orkin pest control on site ( installed light for flies ); last invoice provided
walk in cooler 1C
walk in freezer -18C ( is located downstairs )
- food is stored off the floor and protected during storage
- chlorine test strips are available
- quat used as approved sanitizer for cleaning the food contact surfaces ( measured at 200ppm )

Following need your attention:

- ceiling vent and tiles to be washed
- low temp dishwasher to be supplied with chlorine at min 50ppm concentration
- daily chemical logs to be provided for daily monitoring of approved sanitizers

Follow up inspection to be conducted on Friday 15, 2023
