Observation: Health Approval NOT granted as high temperature dishwasher did not achieve 71C. The dishwasher was run 5x and was not consistantly increasing in temperature. Dishwasher temperature on the 5th run was 65.9C. Have dishwasher repaired/replaced so it is capable of sanitizing (achieve 71C rinse / 82C at gauge) then call for reinspection.

Observation: Noted food equipment stand on floor (rice cooker) and on racks in small hot water tank room. This is not a sanitary/approved food equipment storage area. Remove food equipment from this room.

Comments

-Inspection conducted to grant health approval for ownership change of existing restaurant.
-Overall general sanitation satisfactory. No signs of pest activity.
-All coolers (sliding 2 door x 2, upright one door, prep coolers x 2, under counter) 9C or less and equipped with thermometers
-All freezers (chest x 3) -18C and equipped with thermometer
-Meat slicer and ice machine appeared clean. Remember to keep scoop for ice stored outside of the ice and in a separate holder.
-All hand wash stations (drink area, kitchen, washrooms x 3) had soap, paper towel and hot/cold running water.
-Bleach available on site. 100ppm chloric sanitize available in container with cloths submerged.
-Operator has submitted a completed health application form with supporting legal documents.
-Premises is set up as per original approved floorplans. Recent floor plans dated Oct 21, 2019 are on file.
-The following documents dated Nov 29, 2019 are on file:
Food safety plan, sanitization plan, standard operating procedures and fridge/freezer/Dishwasher temperature log.
-The following documents dated Nov 24, 2019 are on file:
Menu, hot holding logs.


*Ensure items noted in violation codes 302/308, 307 A and B and 311 are completed then call for a reinspection. Health approval can't be granted until there outstanding items are completed.
*Operator wanted to pay $50 permit fee with cheque #21 at time of inspection because he is concerned he might forget at time of follow up inspection.
