302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Chemical dishwasher had no detectable chlorine on the dish surface (chlorine pail was empty)
2) Knife used to cut vegetables was found to have dried carrot debris.
Corrective Action(s): 1) Chemical dishwasher must have a final rinse of 50ppm chlorine on the dish surface to properly sanitize equipment and utensils. Chlorine pail was refilled and dishwasher was primed and tested at 50ppm chlorine on the dish surface. All equipment and utensils were washed and sanitized properly at the time of inspection.
2) Ensure all equipment is properly washed and sanitized after each use. Equipment with built on food debris may require additional presoaking in order to loosen debris. Knife was soaked for washing and sanitizing at the time of inspection.

Observation: Frozen raw meat was stored in a No Frills grocery bag.
Corrective Action(s): Do not reuse grocery bags to store foods to prevent potential contamination of foods. Plastic bags are not intended to be reused.

Observation: Food debris/slime was observed along the floor/wall joint in the walk-in cooler.

Observation: Both Quats sanitizer spray bottles were unlabelled.

Comments

-Walk-in cooler was at 4C.
-Both prep coolers were at or below 4C.
-Upright cooler was at 4C.
-Freezer units (chest, upright, and under counter) ranged from -10C to -18C.
-Pho broth is cooled is small 5.5L and half full 18L containers. Broth was probed at 4C to 6C.
-Sprouts stored on ice at 6C.
-Cooked chicken was cooling at room temperature in single layers (cooled for approximately 1 hour prior to transferring into cooler).
-Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles tested at 200ppm.
-General food storage practices satisfactory at the time of inspection. Foods stored off the floor and covered. Raw meats stored separately from ready-to-eat foods.
-Deli slicer was clean and sanitary. Deli slicer disassembled for cleaning and sanitizing after each use.
-Ice machine was clean and sanitary. Ice scoop stored in a sanitary manner.
-Washroom clean and well maintained.
-Operator FOODSAFE Level 1 valid until March 15, 2023.
