Observation: Multiple Violations:
1) Raw meat stored amongst ready to eat cooked food items in walk in cooler unit.
2) Ice machine has mould inside
3) Pots stored on floor
4) Food items stored in staff room

Corrective Action(s): .
1) Ensure all raw meat is stored together on bottom shelf. Expand to 2 shelves if necessary.
2) Discard ice and clean inside ice machine
3) No pots or equipment is to be stored on floor. These items are moved from floor to counters and can transfer pathogens on the floor to countertops
4) Remove food items from staff room. This item has been discussed before on previous inspection reports

Observation (CORRECTED DURING INSPECTION): Raw meat observed to be thawing on shelf upon arrival of Health Inspector. CORRECTED DURING INSPECTION. Items moved to walk in cooler unit.

Corrective Action(s): Ensure staff are thawing appropriately. This means in the cooler unit, under cold running water or submerged in cold water that is changed frequently. Thawing should always occur in temperatures of less than or equal to 4 degrees Celsius.

Observation: 1) Rodent droppings found in dry storage unit on lower shelf in back corner. Very minimal droppings found today.
2) Fruit flies observed throughout.

- Facility in GOOD sanitary condition - rodent infestation appears to have been eliminated EXCELLENT WORK
- Pest control program in place - twice monthly
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Ice machine scoops in good sanitary condition
- Hair restraints in use
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Vegetable choppers / mandolins in good sanitary condition
- FoodSafe Certified staff present during inspection

NOTE: Low temperature Chlorine dishwasher observed to be at temperatures of 71 degrees Celsius. Consult with Technician as to upper limits of dishwasher unit and correct as necessary. The temperature of a low temperature dishwasher should not exceed 150 degrees F (65.6 degrees Celsius) as it becomes unstable and offgases. Have the dishwasher serviced.
