Observation (CORRECTED DURING INSPECTION): Back door was open at the time of inspection. The bug screen on the screen door is broken.
Corrective Action(s): Repair or replace the bug screen on the screen door. Alternately, the back door must be kept closed to prevent entry of pests.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1 White upright cooler near the dry storage room registered 7 degrees C at the time of inspection. All potentially hazardous items were trannsferred to the walk-in cooler during the inspection.
2. Salad preparation cooler in the front serving area at 6.8 degrees C ( lunch rush??).
Corrective Action(s): 1. Repair or adjust the white upright cooler so that it maintains 4 degrees C or below. Do not store any potentially hazardous foods untill it is capable of maintaining 4 C or below.( immediately).
2. Continue to monitor the salad preparation cooler and repair as needed to ensure it maintains 4 C or below ( immediately)

**Right hand side door on the line cooler across from the grill is broken. Ensure to repair the door so that it closes properly. Check and replace the door gaskets as required ( July 15, 2019).

* Clean the fan covers in the walk-in cooler to remove dust build up ( July 15, 2019).
* Clean floor underneath the coolers and equipment to remove any grease build up ( By July 15, 2019).
* Quats test strips must be available on site to test D10 sanitizer concentration daily.
* Staff must write down the chlorine final rinse concentration in the dishwasher.
