2) Several corners and hard-to-reach areas require a thorough cleaning.

Observation: 1) The edges of numerous shelves are covered in tape and foil. Remove foil and tape; repair properly if needed.
2) The floor behind the sushi bar is badly worn and requires repair or replacement in several areas. 6 months allowed for repairs.
3) The small chest freezer by the sushi bar has been covered in corrugated plastic. This is not an acceptable material as it is not durable or easily washable on the edges. Replace with a smooth, durable, easily washable and food-grade surface.

Dishwasher reached 73 Celsius at plate level.
No food was found at an inappropriate temperature. Good.
Most of the previously unfinished surfaces have been re-finished properly. Good.
Fridges are under 4 Celsius.
All hand sinks are stocked and working.
Hot holding was over 60 Celsius.
No recent pest activity noted.
