- General maintenance and sanitation excellent at the time of inspection. - Hand washing stations supplied with liquid soap, single use paper towels and hot/cold running water. Cooler #1 (back) at 3.5 deg C. Cooler #2 (back) at 4.0 deg C. Small prep.cooler at 3.5 deg C.(Thank you for a new cooler.) All freezers (domestic/chest) maintained below -18 deg C. Hot holding at 79 deg C. Domestic ventilation hoods and stove (2) - clean. Storage - well organized. All equipment stored in sanitary manner. Surface sanitizer (chlorine solution) at 100 ppm. Bleach available on-site. Low temperature dishwasher at 100ppm of chlorine. No signs of pest activity at the time of inspection.
