No violations observed at the time of inspection
General comments:
- High temp dishwasher achieved 70.9 at final rinse cycle at the first trial and achieved 69.6C at the second trial. Monitor dishwasher temp at lease once a day. Sanitizing temperature is 71C at the plate.
- Quat concentration in sanitizer bottles has satisfactory. The sanitizer bucket in the front line does get dirty quickly. Keep an eye on this
- Ingredients in cooler inserts were around 11-15C but turnover was fast and the inspector found it satisfactory
- Good record keeping of equipment temperature, glasswasher Iodine concentration, cooling temperatures in place
- All fridges/coolers/freezers at adequate temperature
- Premises kept clean
- Had some mice over the last few weeks, but pest control came in and sealed gaps around the pipes where mice were caught. Directed the operator to clean the area where droppings are.
