Observation (CORRECTED DURING INSPECTION): Wiping cloth that appeared to be used was observed stored on the counter top at the prep cooler. Staff observed wiping counter with wiping cloths. Wiping cloth did not have any detectable bleach. Photos taken. CORRECTION ORDER ISSUED.
Corrective Action(s): Wiping cloth was placed into a bleach water sanitizer at 100 ppm chlorine. Prep cooler counter was properly sanitized at time of inspection. Ensure that when not in use, wiping cloths are returned to the bleach water sanitizer. Ensure that all food contact surfaces are being routinely cleaned and sanitized to limit potential contamination of food.

Observation (CORRECTED DURING INSPECTION): Open bag and open container of spring rolls and dumplings observed in kitchen area freezer. One spring roll was observed in direct contact with wire rack shelving of freezer.
Corrective Action(s): Ensure that all food items are properly covered to protect from potential contamination. It was discussed with the operator that from here on, spring rolls would be transferred from plastic bags to be stored in a large plastic container with a lid. Dumplings to be stored in the same manner.

Cooked meat was observed to be stored in shallow containers in the walk in cooler. Internal temperature was measured at 4 to 5 degrees C.
Equipment and utensils observed to be in sanitary condition.
Scoops stored safely outside of food product.
Dry storage items stored off the ground.
Food-grade containers used for storage of food.
Personal items stored in designated area away from food.
Staff observed to be properly washing hands at time of inspection.
No latex gloves observed on site.
Prep cooler is no longer leaking water.
