Observation (CORRECTED DURING INSPECTION): 1) Build up of meat debris in the meat grinder/slicer.
2) Missing surface sanitizer.
Corrective Action(s): 1) Disassemble and clean the noted equipment. This will be checked during the next follow up inspection.
2) Operator provided surface sanitizer at 100ppm chlorine bleach concentration. Always have surface sanitizer available in spray bottles or buckets.

- Build up of meat on grinder/slicer.
Correction: - Immediately provide surface sanitizer at min 100ppm chlorine bleach concentration in spray bottles or white buckets. Sanitizer must be easily accessible by staff.
- Clean the meat grinder/slicer. This will be verified during the next follow up inspection.

Observation: Operator unable to demonstrate proper two compartment dishwashing method.
Correction: Operator must designated one compartment for rinsing/washing with detergent. The other compartment must be designated for sanitizing using 100ppm chlorine bleach concentration. Please follow the proper two compartment dishwashing method. This will be verified during the next follow up inspection.

- Daily temperature log available and up to date. Continue with the daily temperature checks.
- All refrigeration units equipped with working thermometers.
