Observation (CORRECTED DURING INSPECTION): Soup on the right side of the hot holding unit observed to be hot holding at only 50c. Unit temperature was increased and the soup was removed and reheated in the oven.
Corrective Action(s): Ensure the same temperature setting is used on the right side as is currently set on the left side of the unit. Left side is hot holding at 65c

Observation: Heavy black mould and algae build up observed in the top side of the ice machine where ice is made.
Corrective Action(s): Unit shut off at time of inspect and technician called. Ensure subway manager examines the cleaning to ensure it has been done properly as the top side of the unit will physically need to be scrubbed to remove the mould before it goes through the sanitizing cycle.

Observation (CORRECTED DURING INSPECTION): Wire brush observed on site. Employee stated this was used to scrub the paninni unit.
Corrective Action(s): Brush was discarded at time of inspection. Wire bristles can potentially break off and get lodged in the throat.
