- Facility has had extensive cleaning including: area surrounding hot water tank, outside area, under shelves, rice storage area
- Areas have been sanitized
- No pre-made sushi stored on counters or in cupboards
- Hot holding unit for tempura in use and at temperatures of greater than 60 degrees Celsius
- Pest technician has inspected facility and provided report
- Holes have been sealed in ceiling - with steel wool
- Back door has door sweep that is tight fitting
- No observations of using cardboard for cutting on to absorb blood of tuna at time of inspection
