Observation (CORRECTED DURING INSPECTION): Rice was at 54C in the hot holding unit.
Corrective Action(s): Hot potentially hazardous foods must be maintained at or above 60C to prevent the growth of pathogens and or the formation of toxins. Rice was reheated to greater than 74C at the time of inspection and hot held.

Comments

-Front prep cooler was at 4C (top and bottom).
-Back upright cooler was at 4C.
-Front beverage cooler was at 4C.
-Upright freezer was at -16C.
-Chicken and beef undergo secondary cook step. Chicken was greater than 74C and beef was greater than 71C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottles labelled and tested at 200ppm.
-Food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Staff FOODSAFE Level 1 valid until November 5, 2022.
-Signature not required due to the COVID-19 Pandemic.
