- Temperature Control: No concerns noted this date. Monitoring is to be conducted at the store level.
- Manual Dishwashing: (2 cmpt sink - prep area) noted on site.
- 4 Step Manual Dishwash method available. (Bleach noted on site)
- Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage:
- Fresh Cut Fruit procedures reviewed. Cleaning and disinfection of food contact surfaces are to be identified.
- Sanitary Facilities: Liquid soap/single use towels, in dispensers, are to be kept at handsink.
- Sanitation: Refer to Violation Notes.
- Chemical Storage: Ok.
- Structurally: Ensure all surfaces are kept in good repair.
- Pest Control: Monitoring is to be conducted on site.
- Garbage, Recycling and Composting Storage: Ensure all food/debris is being stored in covered, rodent proof bins.
