Observation: 1. Frost build up observed in the following units:
- 3 door display freezer
- Display cooler nearest kitchen
2. Dirty equipment stored at room temperature (behind coolers) at start of inspection
**Corrected during inspection** equipment moved to 3 compartment sink area
3. Product (lamb shoulder) observed to be defrosting directly on lid of container of marinated meat; was told by staff later that meat was mouldy
4. Fan shield/guard of walk-in cooler observed to have heavy dust build up
Corrective Action(s): 1. Units will need to be defrosted to remove ice

3. Do not defrost meats on conatiners for food. Food should be defrosted in a tray. Do not store food meant for discarding on top of food meant for store use.
