Observation: - Opened bag of dry food stored uncovered in the basement storage unit.
- Dirty mop stored beside the undercounter cooler in the cookline.
Corrective Action(s): - Only store sealed foods inside the basement storage unit or in bins with tight fitting lids.
- Store the mop in the back of the kitchen away from food.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Observed trays of dumpling paper being thawed at room temperature.
Corrective Action(s): Do not thaw food at room temperature. Thawing must be done:
- under cold running water
- or inside the cooler at < or = 4C.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Significant build up of food debris, grease in the following areas:
- around the fryer/grill/wok station
- underneath the sinks
- inside and around all coolers
- spill in the basement storage unit
Corrective Action(s): Clean up the areas noted above. This will be checked during the next follow up inspection.

Comments

- General sanitation needs improvement. See violation section above.
- Back handwash station equipped with hot/cold running water, liquid hand soap in a dispenser and single-use hand towels.
- Two compartment sinks available for manual warewashing. Sanitizer available at 100ppm chlorine bleach concentration.
- Surface sanitizer available in a designated bin at 100ppm chorine bleach concentration.
- Dry storage area has adequate space and wire racks. Two storage units in the basement. Four freezers and one cooler available.
- No signs of pest activity at the time of the inspection.
- Operating Permit with a valid decal posted.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers < or = 4C
- All freezers < or = -18C
- Warmers > 60C.
- Working thermometers inside all coolers.

* Please note that hot and cold foods cannot be stored at room temperature. Ensure to finish food preparation as fast as possible to avoid potential temperature abuse of cold or hot foods.
