Observation (CORRECTED DURING INSPECTION): 2 issues;
-Bubble tea shaker cups drying at handsink with a hanging rack
-madin brand blender not disassembled for cleaning. observed to have black/brown build up inside
Corrective Action(s): Ensure that all dishware and utensils are washed, rinsed, and sanitized properly at the 3 compartment sink.

Observation (CORRECTED DURING INSPECTION): Insulation taped to prep cooler top door. this is not an easily cleanable surface.
Corrective Action(s): operator removed the insulation. All surfaces must be smooth, easy to clean, and non-absorbent.

Observation: 4 issues;
-new table added beside bingsu machine, blocking mop sink
-bingsu machine added without prior approval
-reusable plates used for taiyaki. Permit conditions state single use utensils only
-premises noted to have 16 seats at the time of inspection (including stools)
Corrective Action(s): Relocate the table as discussed; do not block the mopsink.

Bingsu machine cleaning procedures on site. Reviewed cleaning with operator. Machine is UL certified. Current machine is approved for use. Future addition of menu items or equipment requires prior approval from the area inspector.

REPEAT OBSERVATION: premises is limited to 10 seats. Remove the extra seats immediately.

=Handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Prep cooler (3C), chest freezer (-20C), and undercounter freezer (-18C)
=3 compartment sink with sink plugs available for manual dishwashing; though sanitizer in the 3rd compartment measured +400 ppm QUATS. Use half of the current amount of original chemical or increase water to have sanitizer at 200 ppm QUATS. Operator able to demonstrate manual warewashing method.
=Sanitizer solution at 200 ppm QUATS available in spray bottles; however 4 different spray bottles on site. Label all bottles correctly and ensure that staff are trained on each one's use.
=General sanitation was satisfactory at the time of inspection
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered.
=No evidence of pest activity noted at the time of inspection
=Ice machine was maintained in a sanitary manner
=Staff hygiene was satisfactory at the time of inspection; staff FOODSAFE certification verified. Discussed FOODSAFE certification expiry.
=Permit posted in a conspicuous location
