Observation (CORRECTED DURING INSPECTION): *REPEATED VIOLATION*
The concentration of bleach solution in 2x spray bottles was recorded 0ppm. Staff prepared solution at the time of inspection and the concentration was recorded at 200ppm.
Corrective Action(s): Ensure that an approved food grade sanitizer is available onsite during facility operation for adequate cleaning and sanitation of food contact surfaces.

Observation: 1. Multiple buckets of food stored in walk in cooler, freezer and coolers were not covered.
2. Onion bags were stored directly on the floor.
3. A container of raw salmon was stored on top of the bucket of cooked gravy.
Corrective Action(s): Follow safe food storage practices to prevent the risk of contamination:
- Food products should be properly covered with lids, food grade material etc.
- Store all food products at least 6 inches off the floor.
- Store raw meat at the bottom shelves and ready to eat food/cooked food on top shelves.

Observation: *REPEATED VIOLATION*
A few fruit flies observed in the dry storage room. Improvement noted as compared to previous routine inspection. Sticky traps were in place. Staff stated that the pest control company's inspection is due and will be notified.
Corrective Action(s): - Please ensure that the facility is kept free of pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Food debris noted behind the cooking line.
2. Walk in cooler, dry storage room and corner near tandoor oven is cluttered and unorganized with buckets/food products stored directly on the floor that could result in inadequate cleaning of floor, corners and along the walls.
Corrective Action(s): 1. Regularly clean the facility and ensure that it is maintained in good sanitary condition.
2. Re-organize the above mentioned areas to facilitate regular cleaning.

Comments

Routine inspection conducted.

Observations:
- Temperature of coolers noted at or below 4C.
- Front bar undercounter cooler recorded at 1C.
- Temperature of freezers noted at or below -18C.
- No hot holding at the time of inspection.
- Staff was cooling 'dal makhni' in shallow containers at the time of inspection. The internal temperature of food recorded at 49C. Staff aware to follow cooling curve. Good.
- Handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- High temp mechanical dishwasher reached 73C on dish surface during rinse cycle.
- Pest Control Company conducts routine inspection.
- Back door was properly closed.
- Permit posted at the front. Good.
- Manager has valid FOODSAFE Level 1 certificate.

RECOMMENDATIONS:
- Focus on the safe food handling and storage practices as well as general sanitation of the facility.
- Regular cleaning and sanitation of facility and equipment is required.
- Sanitizer solution should be prepared first thing by adding 1tsp of bleach in 1 Litre of water. Label the spray bottles and train staff on preparing 100-200ppm bleach solution.
Non-compliance in future may result in enforcement action which may include issuance of correction order, fine, violation tickets etc.

NOTE - Staff stated that new shelving units will be installed by next week to facilitate food storage.
