Observation: 1) Cardboard boxes of food are directly placed on the floor inside the walk-in cooler and walk-in freezer.

2) Raw meats are stored on top of fresh produce inside the walk-in cooler. Raw meat juices could drip onto the fresh produce below

Observation: 1) Grease and food debris are observed under the grills. Dried food debris also observed on the handles of the prep cooler.

Observation: Food inside the walk-in cooler and freezer is being stored inside Rona and Home Depot buckets. these buckets are not made out of food grade material and contain chemicals that potentially leach into the food. This is a repeat violation.

- Dishwasher dispensed 50ppm chlorine upon final rinse cycle
- Sanitizer bucket containing wiping cloths have a bleach solution with a concentration of 100ppm chlorine
- All coolers are 4C or below
- Freezer is -18C or below
- No signs of pest activity observed
- Cleaning agents are stored separately from food products
- General sanitation of the facility is satisfactory. However, cleaning is required in the areas mentioned above.
Note: 1) Ensure all wiping cloths are placed inside a bucket containing sanitizer solution when not in use
2) Remove any items not related to the operation of the restaurant to keep the facility organized and to facilitate cleaning.
3) Please have at least one other regular kitchen staff enroll in FOODSAFE Level 1.
