Observation: Walk in cooler has oil building up in a tray underneath the shelf. The wall underneath the dishwasher is covered in dirt. There is a large amount of grease building up under the cook station. There is food debris building up under the prep table.
This is unsanitary and may lead to harbouring of pests.

Clean the mentioned areas thoroughly and more frequently to avoid build up.

General comments
- All hand sinks stocked with paper towels, soap and hot/cold running water
- Low temp chlorine dishwasher had 100ppm on dish surface during final rinse cycle
- 200ppm quat sanitizer in spray bottles present
- Cooler temps </=4C; freezer temps </=-18C
* Do not fill the mini coolers to the very top because it will not achieve -4C of cooling. Instead, keep them about half full and refill as needed.
- Hot holding units >/=60C
- Ice machine is clean
- No signs of pests
- Temperature log is being kept up to date
