- No food preparation/service occurring at time of the inspection.
- Kitchen maintained in sanitary condition
- Hot and cold running water supplied to sinks
- Liquid soap and paper towel present at handsink
- Bleach present for sanitizing step for manual dishwashing. Manual dishwashing sign posted.
- Walk-in cooler was 3C
- Chest freezer -17C, Upright freezer -21C (storage room #3)
- Dry goods stored in metal containers on shelving in kitchen. Ensure lids are securely in place.
- Foods in walk-in cooler were covered and stored on shelving. Recommend labelling prepared foods with date prepared.
- Pest control contract in place with service twice monthly. No rodent droppings observed in kitchen or storage units at time of the inspection.
- Pest proofing measures have been taken which include filling hold under 2 compartment sink and installing metal flashing to back kitchen door. Ensure any additional entrance points which are identified are addressed. Ensure any recommendations from Pest Control Technician are followed.
- Kitchen head cook has completed Foodsafe level 1.
