Observation (CORRECTED DURING INSPECTION): Upright fridge contains a small volume of spring rolls and other higher risk foods and the fridge temperature is at 6 C.
Corrective Action(s): Higher risk foods moved to walk in cooler. Keep potentially hazardous foods at 4 C or colder. Upright cooler is for produce and lower risk foods only.

Observation (CORRECTED DURING INSPECTION): Commerical dishwasher has a final sanitizing rinse of only 10 ppm.
Corrective Action(s): Dishwasher was primed and the final rinse now has a chlorine concentration of 50ppm.
Check daily. Chlorine container also replaced later during inspection.

Observation: A few rodent droppings were noted on the floor of the dry food storage room.
Monitoring traps are empty and licenced pest control report is available for Feb 9/18.
Corrective Action(s): Continue with your pest control program. Keep all items 6 inches up off of the ground and clean dry storage room.
Seal any holes where rodents may enter.
