Observation (CORRECTED DURING INSPECTION): Observation: Food handler observed preparing samosas in back hallway beside food storage area. Samosa trays placed directly on top of laundry bins.
Health rationale: Preparing foods in areas which are not designated for food preparation can introduce potential pathogens. Food handlers also do not have adequate access to a handsink.
Corrective action: Ensure all food preparation is completed in designated food preparation areas in the kitchen, making it easy for food handlers to wash their hands and reducing risk of contamination.

Observation (CORRECTED DURING INSPECTION): Observation1): Vegetable slicer observed to have potato debris/build up.
Health rationale: Food build up on equipment can harbor bacteria growth and/or toxin formation which can potentially contaminate foods.
Corrective action: Clean and sanitize the vegetable slicer using 3-compartment sink or dishwasher with chlorine at 50ppm. Ensure all equipment is maintained in a sanitary manner to reduce risk of contamination.
Observation 2): Ice machine observed to have build up at biofilm.
Health rationale: Biofilm can potentially contaminate ice.
Corrective action: Clean and sanitize ice machine. Discard all ice currently in the machine and ensure the ice machine is kept in a sanitary manner.

Observation (CORRECTED DURING INSPECTION): Observation:
1) Sough on tray placed directly on top of garbage can. Chicken (raw) observed directly on the floor.
Health rationale: Food items placed directly onto garbage bins and directly on the floor introduces the foods to potential pathogens from contamination.
Corrective action: Remove the food trays from the garbage bin and off the ground to reduce risk of contamination. Ensure all foods are kept away from possible sources of contamination at all times.
2) Single-use containers used as scoops for dry storage containers and placed directly inside the containers.
Health rationale: Re-use of single-use containers can introduce bacteria and pathogens to dry foods (no adequate handles) and scoops placed directly inside can contaminate foods.

Observation (CORRECTED DURING INSPECTION): Observation: Fish observed in 2-compartment sink thawing in water at room temperature. Operator mentioned he would be preparing it soon.
Health rationale: Water in sink used for thawing should be changed every 30 minutes to reduce risk of potential pathogen survival and growth. The water can harbor bacteria.
Corrective action: Immediately turn on cold water tap to ensure water is removing potential pathogens from the fish while it thaws.

Observation: Observation 1): Freezer and cooler door handles not maintained in a sanitary condition. Food debris and grease observed on handles.
Health rationale: Food handlers could potentially contaminate food after touching door handles.
Corrective action: Ensure all handles are maintained in a sanitary condition. Clean and sanitize the handles frequently to reduce build up of debris.

Observation 2): Ventilation baffles have build up of grease. Due for cleaning in July 2021.
Health rationale: Grease build up can potentially contaminate cooked foods and can also attract pests.
Corrective action: Clean and sanitize all ventilation baffles to remove grease and ensure they are maintained in a sanitary condition to prevent contamination of foods.

Observation: Observation: Seals on chest freezer in kitchen prep area observed to be coming apart.
Health rationale: Freezer may not be able to maintain temperature if seals are broken, which could potentially promote microbial growth/toxin production.
Corrective action: Repair freezer door to ensure seal is maintained and temperatures are adequate.

Sanitation:
-No pests on premises at time of inspection.
-Dishwasher sanitizing concentration of bleach at 50ppm chlorine.
-Quats sanitizer at front area and back kitchen prep area in spray bottle at 200ppm Quats concentration.
-Both handsinks at front service and back prep area adequate with running hot and cold water, soap and paper towel.
-All foods area covered and protected from contamination in prep cooler.

Storage:
-Personal items are separated from food items.
-Dry storage is in clean and sanitary manner with tightly sealed lids.

Administration:
-Foodsafe Level trained employee on premises at time of inspection (expires July 19, 2023)
-Operating permit visible during time of inspection.
