Observation: A few rat droppings are still found under dishwasher and few mice droppings under server station (on shelves). Identified all areas to manager onsite.
Corrective Action(s): Please remove the droppings and sanitize the affected areas. Regularly clean the noted areas to monitor for pest activity. Recommend placing utensils and napkins in rodent proof containers instead of plastic bags or open as these items are left there overnight.

Nothing stored on stainless steel table designated for drying cleaned dishware.
Water around rice steamer has been removed.
Floor cleaning has improved.
Toilet from staff room has been decommissioned.
Shelving units have been purchased to be installed where toilet was to store chemical agents.
Sink remains for staff handwashing.
Orkin pest control report received by e-mail.
- hole around pipe under handsink by fryer has been sealed
- additional door sweep added to back door
- floor drain at sushi bar has been cleaned
Chicken FSP is ok and posted for staff reference.
General FSP collected onsite for review. SP is being revised.
Standup freezer has been replaced with a new unit, at -15C
Sushi door coolers (x2) has been replaced but one more should be replaced as there is a crack and no door handle.
Sushi bar handsink recaulked but material is not durable - manager will be using another silicon to seal the sink properly.
Last staff is retaking Foodsafe tomorrow, please send their temporary certificate by Monday March 18, 2019.
