A routine inspection was completed: - Coolers 4C or colder; freezers -21C or colder; hot holding units 60C; thermometers present; and temps recorded daily. - High temperature dishwasher had a rinse cycle temperature of 71.9C at the plate's surface. - Hand sinks stocked with liquid soap, paper towels, and running hot and cold water. - Bleach sanitizer in spray bottle and cloth bucket had [Cl2] of 200ppm. - All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor. - No expired foods in use or for sale. FIFO rules being followed. - General sanitation level is good. The exhaust canopy is clean. - Active pest monitoring being done by a professional company. Minimal presence of drain/fruit flies found in downstairs dry storage area and bar area. Traps present to catch them. Some mice droppings observed in downstairs storage area. Catch-all-traps, snap traps and glueboards present. Recent thorough inspection of the premises completed by pest company and blocking of small openings completed. - FoodSafe certified staff present. - Door gaskets on the front pizza assembly cooler is being held on with duct tape. Duct tape is not food grade or washable or durable. Owner explained they are in the proces of getting quotes to replace them.
