Cleaning completed, mould removed and caulking redone at waitressing station handsink.
Thermometer provided at sushi bar.
Sushi rice measured to be 4. Procedure is to discard sushi rice after 2 hours; usually one batch of sushi rice is finished within an hour at peak hours and 1.5 hours at slow time.
Discussed noting down expiry time. Sushi info provided to operator.
All food stored off the ground in walk-in cooler.
New health permit given to staff, please post it in conspicuous location.
