Freezer unit was -13 C but should be maintained at -18 C or colder.
Quaternary ammonium sanitizer was available and at 200 ppm concentration to sanitize food on that surfaces.
Dishwasher was operating but not reaching final rinse of 74 C / 165 F internally
Cleaning/organization completed overall.
Following to be done:
Reorganize personal items to be stored away from food areas (eg purses etc). Also provide proper hook to store aprons/uniforms.
Provide sanitizer buckets in work stations to store wiping rags between use. Label bucket.
