- Ensure to continue following your sanitation plan for daily, weekly, monthly and seasonal cleaning, including hard to reach areas.
- Remember that foods must be cooled in the following manner:
From 60 degrees Celsius to 20 degrees Celsius within 2 hours (use ice water bath, cooling wand, or separate into smaller portions and in shallow pans), then,
From 20 degrees Celsius to 4 degrees Celsius within next 4 hours (in cooler at 4 degrees Celsius).
