Code 302 noted on Routine inspection # RSHA-CQYPH2 of Apr-17-2023 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: 1) High temperature dishwasher registered at 70.6 degree C at dish surface. 2) Sanitizer bucket registered at 50ppm QUATS and cloth was not completely submerged in sanitizer solution. Correction: 1) Ensure that high temperature dishwasher is serviced such that it is achieving 71 degree C or more at dish surface. 2) Ensure that sanitizer buckets are registering at 200ppm QUATs and that cloths are completely submerged in solution

Reinspection based on previous inspection report. - Food Storage: Ensure all food items on display ontop of prerp lines are covered and/or individually wrapped. (ie: previously discussed.) - High Temperature Dishwasher has been serviced. 74.2 C noted at the plate. - Wiping cloth storage: Limit the amount of clothes being used on site. Store all wiping cloths, used on food contact surfaces, in a sanitizer at all times. - Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer. - Pest Control: An active rodent control program is in place. Follow up with Certified program provider will be conducted by ownership. Ongoing. - Structurally: Exterior door sweep has been installed. Thank you!
