Observation (CORRECTED DURING INSPECTION): Large amounts of cooked food items out on rolling rack upon arrival of EHO. Temperatures of 19 degrees Celsius observed. Items cooked in "morning".
CORRECTED DURING INSPECTION - items placed in deep fryer unit and then on to buffet table.

Corrective Action(s): When cooling items are to be cooled from 60 to 20 degrees in no more than 2 hours then 20 to 4 degrees in 4 hours. Ensure proper cooling occurs.
Ensure food is not held at room temperature for extended time periods instead of adding to walk in cooler unit. Even when catering to a large party food items must be moved to cooler units to ensure proper temperatures are achieved.

Observation: Wall mount potato chipper not properly cleaned and sanitized after use. Dried on potato observed.
Mandolin vegetable cutters observed to be stored in unsanitary condition. Carrot debris found on multiple mandolins at time of inspection.

Corrective Action(s): Ensure this items is properly washed and sanitized after each use. These items have been observed to be improperly cleaned and sanitized in the past.

Observation (CORRECTED DURING INSPECTION): Paper towels missing at hand sink by back door.
CORRECTED DURING INSPECTION - EHO obtained paper towel roll and placed at back sink.

Corrective Action(s): Owner stated previous Pest Control Technician no longer in business. Obtain new pest control.
Ensure facility is properly serviced for both cockroaches and rodents before infestation becomes out of control again.

Wooden plywood does not extend all the way to the floor.
Potential holes observed along pipes of wall inside dry storage area.

Corrective Action(s): Discuss with Pest Control Technician. Find and seal all holes.
Ensure dry storage containers for all dry storage items that are in bags or other soft containers that could easily be chewed into.

Corrective Action(s): Clean and sanitize areas affected by rodent droppings. Use 200ppm Chlorine or equivalent.
Ensure any food items suspected of being contaminated by rodent droppings are inspected for contamination and discarded if evidence of contamination is found.
Clean and sanitize surfaces of food storage containers.
Clean and sanitize lower shelves throughout. as a precaution.
Exhaust canopy to be cleaned tonight - due for service. Ensure front grill vents are cleaned.

- Glasswasher achieving final sanitizing rinse of greater than or equal to 12.5ppm Iodine 50ppm Chlorine at the glass
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT

- Ice machine and scoops in good sanitary condition

NOTE: Facility had buffet in operation for special event during inspection. EHO did not confirm temperatures of buffet food items at buffet due to large number of guests interacting at buffet table making it difficult to interfere. At next inspection EHO to confirm temperatures at buffet table are maintained at 60 degrees Celsius. EHO did observe items being added from oven and deep frying unit to hot holding unit.
