Follow-up inspection to routine conducted on Oct 24, 2018 (RPT#: JMAA-B5UV2X).

- Pizza trays AND deep dish trays have now been cleaned and sanitized. Thank you for your co-operation. Clean pizza trays are stored underneath the counter, whilst dirty trays are placed directly under the food prep table
- Sanitizer present inside the 3-compartment sink at 200-400 ppm - excellent
- Permit has been obtained by the manager and is now visibly posted

No further concerns at this time. Ensure that pizza trays are cleaned and sanitized after use and before storing them away. Make sure all staff understand where dirty trays are to be stored (underneath the front prep table). Do not leave dirty trays overnight - all trays should be cleaned and sanitized before the shift ends.

Spot checks may be conducted to confirm that pizza trays are maintained in sanitary condition.

NOTE: Temperature logs were taken today; however, ensure that you comply with your food safety plan's requirement of taking temperatures for hot holders and cold-held food at least 3 times a day.
