Observation (CORRECTED DURING INSPECTION): Several equipment observed to have dough build up, despite baking staff already have gone off shift. This includes the dough divider, handles of standup fridge and freezer.
Corrective Action(s): Directed staff to clean and sanitize at time. All equipment must be cleaned as per your corporate safety plan.

Observation: Significant fruit fly presence throughout premises. Rodent droppings observed behind mixer and beneath slicer.
Corrective Action(s): Premises to increase frequency (minimum bi-weekly) of pest control service by September 4th. Discuss with your technician to implement a targeted treatment plan for fruit flies. Increase number of traps for rodents with particular attention to where droppings were found. Fax or email EHO copies of your invoice after each service visit.

Reviewed manual warewashing procedures with staff - okay. Sanitizer ~ 200 ppm detectable in sanitizing sink; test strips also available.
Standup cooler 4 C. Standup freezer -17 C.
Time tracking available for all potentially hazardous products.
Non-potentially hazardous samples are covered and supplied with tongs for customers.
