Observation (CORRECTED DURING INSPECTION): Bowl of eggs and small container of beansprouts were found at room temperature. Per staff, items are brought out to wait for a customer to order and have been out for 1 hour.
-Cold potentially hazardous foods must be stored at or below 4C. Foods taken off of temperature control must be used within 2 hours. If items are not in active use, ensure food is stored in the cooler in the meantime.
-Staff moved items to cooler unit at time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) Small container of flour and large container of sugar were not covered.
-Cover dry storage containers with lids to protect food from contamination.

2) Rice scoop found in water at room temperature. Water was cloudy with rice debris.
-Clean and sanitize rice scoop. Ensure rice scoop is stored in ice water that is refreshed frequently to minimize bacterial growth.
-Staff sanitized rice scoop and container in dishwasher at time of inspection.

Observation: Large amount of debris and dust noted under cooking unit. Per staff, floors are cleaned daily but cleaning underneath the units is done less frequently.
Corrective Action(s): Clean and sanitize noted area. Ensure cleaning of this area is followed as per your Sanitation Plan.

-Chest freezer: -13C
-Walk-in cooler: 4C
-Rice in rice cooker: 69C
-Hot-holding curries and sauces observed. 2 pots measured between 62-66C. 1 pot was in the process of being cooked - per staff, sauce must be slowly cooked up to temperature to prevent burning. Monitor sauce to ensure it gets hot-held at or above 60C.
-Undercounter cooler in front area: 4C

-Handsinks are fully equipped with hot/cold running water, liquid soap, and paper towels.
-Low-temperature dishwasher is functional and dispensing 50ppm chlorine at plate surface.
-Bleach solution in spray bottle measured at 200ppm chlorine.
-Ventilation hoods have slight grease build-up. Next service date is June 2022. Staff indicates it will be cleaned this week.
-Ice machine in front area is not in use.
-No signs of pest activity at time of inspection.
-FoodSafe certified staff on duty. Verified at time of inspection.
-Site is only offering Take-Out Only at this time.
