Observation: - Meat chopping boards with deep gashes and food stains were not easily cleaned and sanitized.
- Severe food stains on meat conveyer belts observed.
- Knives on the magnetic strips had food debris on.
Corrective Action(s): - Either replace the chopping boards or resurface them.
- Scrub the conveyer belts vigorously with soap by the end of business day, or replace the belts if it's hard to clean the food stains.
- Only cleaned and sanitized knives put on the magnetic strips. Magnet strips need daily cleaning too.

Observation: - Both hand sinks in satff room upstairs and the meat processing rooms had no paper towel stocked. 15 food handling Staff had never been required to wash hands prior to work in the mewat processing room.
Corrective Action(s): - Set a rule to the staff: the first thing to do is that every one has to wash hands properly before put gloves on and satrt to work.

Observation: Large flies observed inside and outside of the building.
- 3 bins with food debris in it were placed outside and attract large flies.
- Garbage bags sitting on the floor inside the meat processing room
Corrective Action(s): - Clean and sanitize the bins immediately and NO dirty bins placed outside.
- Prepare a cart to keep garbage bags inside the processing room.

Observation: - Food debris observed on the wall, the ceiling and pull-down faucet head in 3 compartment sink.
Corrective Action(s): - Please arrange deep cleaning by the end of the busienss day daily.
- Strong recommend to install wall mounted cleaning and sanitizing dispenser such as Ecolab, State chemical.

Comments

Routine inspection conducted with the presence of the owner. Owner was cooperative and willing to set a high food safety standard. Please take corrective actions to the violations.

- General sanitation needs improvement for both interior and exterior.
- Both hand sinks had no paper towel inside the dispenser. Loose paper towel observed on the table upstairs. Remind the owner to fully stock the hand sink all the time.
- Walk in cooler temperature 1.5C. Walk in freezer -19C. Meat processing room 1.4-3.8C - Excellent!
- Overturn in the walk in cooler approximately 2-3 days, maximum 6 months for walk in freezer.
- Bleach available onsite. Recommended to equip wall mounted dispenser for cleaner and sanitizer.
- Contract company to clean the Soiled cloth in the buckets inside the food processing room.
- Drains sanitation inside the food processing room was OK. Reminded the owner to scrub both sides of the metal cover and brush the drain daily.
