- 1kg cheese at 15C
- 200g pepperoni slices at 13C
- few slices deli meats at 14C

Observation: Significant build up of grease and food debris on the conveyor of the pizza oven. This is a repeat violation.
Corrective Action(s): Immediately clean the noted equipment. A pressure wash may be required to remove the caked on food debris.

Observation: There is no hot/cold running water at the only main handwashing station in the kitchen. The staff stated that they use the handwashing station in the staff washroom.
Corrective Action(s): Immediately make this handwashing station available and supplied with hot/cold running water, soap, and paper towels. You cannot operate with a handwashing station that is easily accessible by staff in the main kitchen.

- Two compartment sinks available for manual dishwashing. No sanitizer available onsite.
- Dry storage area has adequate space and wire racks. Too much clutter in the back.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All other coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding unit: > 60C
- The operator must begin daily temperature log. This will be part of the Sanitation Plan and verified during the follow up inspection.
