209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) A tray of vegetables was stored under the dishwasher, next to a container of chemicals.
2) Raw shelled eggs were stored above cooked foods.
Corrective Action(s): 1) Discontinue the practice of storing foods under the dishwasher area to prevent potential contamination of foods. Vegetables were relocated at the time of inspection.
2) Ensure raw eggs and other raw meats are stored below/separately from ready-to-eat foods to prevent potential contamination of foods. Eggs were moved to the lowest level of the cooler at the time of inspection.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A frozen bag of meat was stored at room temperature.
Corrective Action(s): Frozen foods must be thawed under cold running water or in a cooler at 4C or less to prevent the growth of pathogens and/or the formation of toxins. Meat was still frozen and relocated to the cooler at the time of inspection.

Observation: Rodent droppings were observed in the facility. Facility is currently serviced by professional pest control services.
Corrective Action(s): Clean and sanitize affected areas and contact pest control operator if conditions do not improve.

Comments

Kitchen:
-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Under counter cooler was at 4C.
-Kitchen upright cooler was at 4C.
-Storage area upright cooler used for thawing frozen meats was at 3C.
-Kitchen freezer was at -17C.
-Hot holding was greater than 60C.
-Sprouts stored in ice/water mixture.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface (minimum of 50ppm required for sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, and liquid hand soap.
-Bleach sanitizer spray bottle was labelled and tested at 100ppm.
-Mandolin slicer was disassembled for cleaning and sanitizing. Mandolin was found to be in good sanitary condition.
-Rice scoop stored in ice/water mixture and ice added as needed.
-Ice machine was found to be clean and sanitary. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered. Raw meats were found stored separately from ready-to-eat foods.
-Kitchen sanitation was good at the time of inspection.

Bubble Tea area:
-Under counter cooler was at 4C.
-Upright freezer was at -12C.
-Ice scoops stored in a sanitary manner.
-Handwash stations accessible and supplied with hot and cold running water, and liquid hand soap.
-Bleach sanitizer solution was at 200ppm.
-Blender containers/shakers sanitized after 2 hours of continuous use.

General:
-Facility serviced by professional pest control operator (every two weeks).
-FOODSAFE Level 1 valid until July 21, 2029
