Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food contact surfaces, cutting boards stained and embedded food debris observed.
Correction: Thoroughly wash, scrape, scrub cutting boards to remove embedded food debris.
Black cutting boards cloak the embedded food debris, stains are not visable.

Follow-up Inspection
Malfunction sanitizer dispenser next to oven and 2-compartment sink repaired, dispensing a solution at 200 ppm Quats.
At the time of inspection wiping clothes were observed in sanitizer buckets.
Raw chicken is now stored in the bottom of the toppings cooler to prevent contamination.
Food safety plans and sanitation plan have been re-implements.
Record sheet temperatures will be recorded in Fahrenheit as specified on record sheet, temperature readings will be initialed by staff.
Sanitizer test results will now be noted on record sheets.
Discussed regular and prescriptive methods for cleaning of cutting boards, specifically colored cutting boards.
