Potentially hazardous foods all within prep cooler operating at 4C
Temperature log and chlorine log maintained. *Must ensure that temperatures are recorded for ALL coolers and freezers (not just walk-in cooler)
Sanitation has improved - *Some more cleaning is required underneath front prep cooler and in ventilation hood. Ventilation hood will be professionally serviced tonight.
Tomato sauce maintained in ice bath. Ice must be to the level of the food with in the container and completely surround the sauce to ensure it remains at </=4 C.
